Existing forms of heavy metals and their toxicity in foods

Abstract: This paper briefly introduced the research advance about the forms of heavy metals and their relationships with toxicity in some foods. The characteristics of chemical forms of heavy metals in foods, the existing forms of heavy metals in different types of foods, and the relationships between the forms of heavy metals in foods and their bioavailability and toxicity were summarized. Some problems urgent to be resolved in this field were put forward.
